Healthy Eating : A Chicken Fajita With A Twist

Those who travel often have a difficult time finding meals in restaurants that are both tasty and considered healthy eating.  Finding recipes that you can easily cook on the road is one of the best options while traveling.

As most of you know, I'm a truck driver and one of the things I've discovered over the years is that food that tastes good and is healthy for you often do not seem to coincide. So, I'm always looking for a meal that will satisfy my taste buds and provide me with healthy results.

Last night, my wife cooked a meal on the truck that beats anything I've found in any truck stop and was, in my opinion, healthy eating and delicious. Here's the recipe in case you want to try it!

 

Healthy Eating: A Chicken Fajita With A Twist
Chicken Fajita With A Twist
Ingredients:

4 boneless/skinless Chicken Thighs
1 half Green Bell Pepper
1/2 of medium White Onion
8 slices Provolone Cheese
3 common white Mushrooms
Leaf Lettuce
Olive Oil
2 tsp. of Fajita Seasoning



Cooking Steps:

Lightly spray non-stick electric frying pan with olive oil.
Slice onions and green peppers in strips.
Slice mushrooms.
Stir-fry onions, green peppers and mushrooms for 3 minutes at 350° then remove from frying pan.
Slice chicken thighs into strips and sprinkle generously with Fajita seasoning, then brown in frying pan.
Add already partially cooked vegetables.
Cook together for approximately 2-3 more minutes.
Put two slices of Provolone Cheese on each large leaf lettuce, then place about 1/4 of chicken/veggie mixture on top of cheese.

Wrap it up and enjoy!

Preparation time is about 30 minutes.

Carbs: 5 grams per fajita wrap


Comparison:

A 6" floured tortilla has 19 grams of carbs by itself. This meal with the floured tortilla instead of the leaf lettuce changes the carb count from 5 to 23 grams per wrap.


Finding healthy eating alternatives isn't hard to do. It just takes a little homework and imagination to make meals you are already familiar with, and enjoy. Having access to foods that are low in carbs, delicious and easy to prepare is necessary to maintain a healthy diet. Chicken is a good food item that provides just what you may need to stay fit and healthy.
